Thank you lovely Norah, I might have added that I personally make it with half Rhubarb and a few raspberries. The alternative probably isn’t a Charlotte so I didn’t include it, but it does make a fluffy pink centre that is delightful.

What an interesting variation. I’m not so keen on rhubarb so am hesitant to endorse it completely, but I’m sure it would be delicious!
